When a pan cannot follow the food into the oven, a frittata or a seared thigh has to be moved into a second dish to finish. All-Clad rate these to 500F on the shelf, so one pan handles both halves of the job.
Metal tongs and metal spatulas, since All-Clad recommend plastic, nylon, silicone or wood on the PTFE surface. All-Clad also advise against using these pans under direct top heat.
Check the minimum pan diameter your induction hob will detect. The smaller pan is 8 inches at the rim and its steel base is narrower still, and some zones will not switch on for a base that small.
