A flat top left on the patio collects dust, pollen and damp between cookouts, and bare seasoned steel is exactly what surface rust goes for first. A silicone sheet keeps that off the cooking surface.
Cooking on, and for a hot griddle. Mats of this type are sold to protect the plate, so the griddle has to be fully cool before it goes on and it must come off before the burners are lit. It covers the cook top only, not the whole unit.
